Resting spirits – letting them sit awhile after they have been made, aged, or blended – is an essential step in making just about every spirit, but what exactly is going on while the spirit sits there for hours, days, weeks – or even years? Resting a spirit in glass or stainless steel isn’t the same as aging in a wooden barrel, but it is crucial nonetheless.
Join the famously well-rested spirits expert Philip Duff as we examine what’s actually happening during a resting period. The seminar will feature research on resting conducted by Beluga Vodka at it’s remote Mariinsk distillery in Siberia, as well as some surprising truths about resting from Mexico, England, Scotland and France. Stainless steel or glass? Do you agitate the liquid or not? How do you know when it’s done? Does it really matter that much? We’ll be tasting specially-prepared unique samples of spirits: right off the still, rested just a few days, 30, 45 and 90 days, and we’ll let you taste the difference between a cocktail that has been rested for 1 week and 3 months, and provide you with details on sensory improvements that resting creates.
